Igredients For Summer Special :

• 2 ripe mangoes, diced – sweet and juicy, it’s the recipe’s star.

• 1 red bell pepper, diced- adds colour, texture and a bit more sweetness, plus it’s loaded with healthy antioxidants.

• 1/2 red onion, finely chopped -adds more colour, crunch and mild onion flavour.

• 1 jalapeno pepper, seeded and minced- lends a little spicy heat and colour.

• Juice of 1 lime -balances the sweetness with its slightly bitter and sour juices.

• Fresh cilantro leaves, chopped -this fresh herby green adds a punch of citrusy notes.

• Salt and pepper to taste -a healthy pinch will bring out all the flavours.

INSTRUCTIONS

  1. Combine the diced mangoes, red bell pepper, red onion, and jalapeno pepper in a bowl.
  2. Squeeze the lime juice over the mixture.
  3. Add chopped cilantro leaves.
  4. Season with salt and pepper.
  5. Toss gently to combine all the ingredients.
  6. Let the flavours meld together in the refrigerator for at least 30 minutes before serving.
