- 1 cup rinsed quinoa
- 1 Tablespoon olive oil
- 2 Sliced carrots
- 1 Diced onion
- 2 Chopped celery
- 3 Minced cloves garlic
- 1 Teaspoon thyme
- 1 Teaspoon rosemary
- 6 cups vegetable broth
- 1 Can (14 oz) diced tomatoes
- 2 cups mixed vegetables (e.g broccoli, bell peppers, zucchini)
- Salt and pepper to taste
- Fresh parsley for garnish
INSTRUCTIONS :
- In a large pot, heat olive oil over medium heat. Then Add onions, celery, and carrots. Cook until all vegetables become softened.
